Butter Pecan Cookies

Ingredients
- 3/4 cup butter
- 1/2 cup packed brown sugar
- 1 tablespoon granulated sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 2 cups flour
- 1 pound pecan halves
Instructions
- Preheat oven to 350 degrees.
- Cream butter in large mixing bowl. Gradually add brown sugar and granulated sugar. Cream well.
- Add unbeaten egg yolk and vanilla and beat well.
- Blend in sifted flour to form a stiff dough. Mix in pecans.
- Shape dough into small balls. Place on greased cookie sheet.
- Flatten cookies with bottom of glass dipped in sugar.
- Bake at 350 degrees for 7-9 minutes, till golden brown (do not overbrown.)
- Cool before frosting. Garnish with pecan halves.

These are soft and rich and sweet and don't need any frosting! I first made balls of cookie dough from a scoop, so they would be the uniform in size, and then I chilled them in frig just a bit. This helps them hold their shape better when baking. There's a lot of butter in these, so they would have a tendency to spread out when baking before setting, so chilling helps prevent that.
